So...what do you do if you have some dark tequila and it’s a bit too strong for you? &#13;Well, you get SHAKIN’ and make these...&#13;Sparkling Tequila Sunrise&#13;&#13;2 ounces Tequila&#13;1 ounce Amaretto&#13;3 ounces Cranberry Juice&#13;Pour these ingredients into a cocktail  mixer and shake well. Strain into an old fashioned glass over ice. &#13;Now add..&#13;2 ounces Orange Juice&#13;Top off with Ginger Ale and garnish with a slice of orange and some maraschino cherries, and enjoy!&#13;&#13;And what’s more fun than Bakin’ CHOCOLATE?&#13;Chocolate Rum Cake&#13;&#13;&#13;&#13;&#13;&#13;&#13;Combine the above ingredients and pour into a bundt cake pan that has been greased. You can add chopped nuts (1/2 - 1 cup) to the top of the batter, if you like. &#13;Bake at 325º-350º for 50-60 minutes. Remove from oven and let cool. Flip out of cake pan and glaze with one of the glazes below, or dust with a lite coating of powdered sugar. &#13;&#13;Chocolate Ganache:&#13;2 cups heavy whipping cream&#13;15 ounces bittersweet (not unsweetened)  or semisweet chocolate, chopped&#13;(and I like to add about a tablespoon  or two of rum or amaretto)&#13;&#13;Bring cream to simmer in small saucepan.  Remove from heat; add chocolate and whisk until smooth. We thought we would be spotlighting the traditional mimosas, but the big hit turned out to be a lite and sparkly Pomegranate Breakfast Soda. &#13;So that’s what we’re SHAKIN’ for this podcast:&#13;Pomegranate Breakfast Soda&#13;&#13;&#13;&#13;&#13;&#13;&#13;*if you want to kick it up a notch, &#13;add a little champagne...or vodka.&#13;&#13;&#13;from&#13;&#13;Continuing on with a traditional brunch menu item, &#13;we made...&#13;&#13;Quiche Lorraine&#13;&#13;&#13;&#13;&#13;&#13;1/2 (15-ounce) package refrigerated piecrusts &#13;8 bacon slices, cut into 1/2-inch pieces &#13;4 green onions, chopped &#13;2 cups (8 ounces) shredded Swiss cheese, divided &#13;6 large eggs &#13;1 cup whipping cream &#13;1/2 teaspoon salt &#13;1/8 teaspoon ground red pepper &#13;1/8 teaspoon ground white pepper &#13;1/8 teaspoon ground nutmeg &#13;&#13;Fit piecrust into a 9-inch pieplate according  to package directions; fold edges under, and crimp.&#13;Bake at 400° for 7 minutes; remove from oven.&#13;Cook bacon pieces in a large skillet until crisp;  drain on paper towels, and crumble. <itunes:summary>It was Cinco de Mayo weekend, so we started off SHAKIN’ Margaritas&#13;You’ll need...&#13;&#13;2 ounces White Tequila&#13;1/2 ounce Cointreau or Triple Sec&#13;1 tablespoon Lime Juice&#13;&#13;Shake ingredients in a cocktail  mixer and strain into a chilled glass.  You can garnish the rim of the glass  with salt, or with a slice of lime.&#13;&#13;We stayed in spirit of Cinco de Mayo and got to BAKIN’ ...&#13;Roast Pork Tenderloin with  Spicy Apple &amp;amp; Green Chile Salsa&#13;&#13;&#13;&#13;&#13;1 1 ½- to 2-pound pork tenderloin &#13;1 teaspoon chili powder &#13;1/2 teaspoon cumin &#13;1 1/2 teaspoons salt &#13;2 tablespoons olive oil &#13;2 medium unpeeled Granny Smith apples, diced &#13;1 small red onion, chopped &#13;2 cloves garlic, minced &#13;2 tablespoons cider vinegar &#13;1/2 cup chicken broth &#13;1 4 ½-ounce can chopped green chilies &#13;1 jalapeño, seeded and chopped &#13;1 tablespoon sugar &#13;1/4 teaspoon black pepper &#13;1/3 cup chopped fresh cilantro &#13;1 red pepper, diced&#13;&#13;Preheat oven to 400 F. Rub the pork with the chili powder, cumin, and 1 1/4 teaspoons of the salt.  In a large skillet, over medium-high heat, heat  1 tablespoon of the olive oil. Add the pork and brown  on all sides. Transfer the pork to a roasting pan; set aside. In the same skillet, over medium heat, add the remaining olive oil. Add the apples, red onion, garlic, and vinegar and cook 5 to 8 minutes or until the  apples and onion are translucent. Add the broth,  chilies, jalapeno, sugar, black pepper, cilantro,  and the remaining 1/4 teaspoon of salt. Stir and cook, uncovered, over medium-low heat until the apples are tender, 20 to 30 minutes. Add the red pepper during the last 5 minutes of cooking; set aside. While the salsa cooks, roast the pork for 20 to 25 minutes. Let stand  5 minutes before slicing. Here’s how you can make your own:&#13;&#13;Chocolate Fortune Cookie Martinis&#13;Equal parts:&#13;Vanilla Vodka&#13;Amaretto&#13;Bailey Irish Cream&#13;&#13;&#13;&#13;&#13;&#13;Pour all ingredients into a cocktail shaker and shake with ice. Drizzle some chocolate syrup into a martini glass, then strain mixture into glass, garnish with a fortune cookie and enjoy!&#13;&#13;And now for the BAKIN’...&#13;“The Doug” made a delicious &#13;Chicken Wellington&#13;&#13;&#13;&#13;&#13;&#13;&#13;&#13;&#13;1/2 pkg. Pepperidge Farm® &#13;    Frozen Puff Pastry Sheets (1 sheet) 1 egg  1 tbsp. water  4 boneless chicken breast halves  1/2 tsp. dried thyme leaves, crushed 2 tbsp. butter OR margarine  3/4 cup sliced mushrooms  1 medium onion, finely chopped 1 tbsp. chopped fresh parsley  1 pkg. (3 oz.) cream cheese, softened 1 tbsp. Dijon mustard&#13;&#13;Directions:&#13;THAW pastry sheet at room temperature 30 min. Mix egg and water. Preheat oven to 400&amp;amp;degF.&#13;SPRINKLE chicken with thyme. Season with salt and pepper if desired. Melt 1 tbsp. butter in skillet. Add chicken and cook until browned. Remove chicken from skillet. Cover and refrigerate 15 min. or up to 24 hr.&#13;ADD remaining butter to skillet. Add mushrooms and onion and cook until tender and liquid is evaporated. Stir in parsley.&#13;MIX cream cheese and mustard. Unfold pastry on lightly floured surface. Roll into 14" square and cut into 4 (7") squares. Spoon about 1 tbsp. mushroom mixture on each square. Top with chicken. Spread 1 heaping tbsp. cream cheese mixture on chicken. Brush edges of squares with egg mixture. Fold each corner to center on top of chicken and seal edges. Place seam-side down on baking sheet. To make your own all you need is...&#13;&#13;&#13;&#13;&#13;&#13;&#13;&#13;&#13;&#13;Pour all ingredients into a cocktail shaker and shake with ice. Strain into a cocktail glass, garnish with a slice of lime and enjoy!&#13;&#13;And now for the BAKIN&apos;...&#13;We covered another fabulous and light recipe, Barbecue Roasted Salmon. This is a super easy  and delicious recipe that takes about 1 hour prep time, (and that’s mostly marinating the salmon), and about 12-15 minutes cooking time. We like using mexican chili powder to add a little more kick to the spice.  &#13; Barbecue Roasted Salmon&#13;&#13;&#13;&#13;&#13;&#13;&#13;&#13;&#13;1/4 cup pineapple juice  2 tablespoons fresh lemon juice  4 (6-ounce) salmon fillets  2 tablespoons brown sugar  4 teaspoons chili powder  2 teaspoons grated lemon rind  3/4 teaspoon ground cumin  1/2 teaspoon salt  1/4 teaspoon ground cinnamon  Cooking spray  Lemon wedges (optional) &#13;&#13;Combine first 3 ingredients in a zip-top plastic bag;  seal and marinate in refrigerator 1 hour, turning occasionally. &#13;&#13;Preheat oven to 400°.&#13;&#13;Remove fish from bag; discard marinade. Combine sugar and next 5 ingredients (sugar through cinnamon) in a bowl. Rub over fish; place in an 11 x 7-inch baking dish coated with cooking spray. Bake at 400° for 12 minutes or until fish flakes easily when tested with a fork. Serve with lemon, if desired.   Yield: 4 servings   From CookingLight.com - September 1988&#13;&#13;&#13;And... as promised, here’s the recipe for asparagus  that goes perfectly with the salmon. &#13;&#13;Roasted Asparagus  with Balsamic Browned Butter&#13;&#13;&#13;&#13;40 asparagus spears, trimmed (about 2 pounds) &#13;Cooking spray &#13;1/4 teaspoon kosher salt &#13;1/8 teaspoon black pepper &#13;2 tablespoons butter &#13;2 teaspoons low-sodium soy sauce &#13;1 teaspoon balsamic vinegar &#13;&#13;Preheat oven to 400°.&#13;Arrange asparagus in a single layer on baking sheet; coat with cooking spray. Sprinkle with salt and pepper. Bake at 400° for 12 minutes or until tender.&#13;Melt the butter in a small skillet over medium heat;  cook for 3 minutes or until lightly browned, shaking pan occasionally. Remove from heat; stir in soy sauce and vinegar. Drizzle over the asparagus, tossing well to coat.
